  • 4 large baking potatoes, baked
  • 3 tablespoons vegetable oil
  • 1 tablespoon grated parmesan cheese
  • 12 teaspoon salt
  • 14 teaspoon garlic powder
  • 14 teaspoon paprika
  • 18 teaspoon pepper
  • 8 slices bacon, cooked and crumbled
  • 2 cups shredded cheddar cheese (8 ounces)
  • 12 cup sour cream (optional)
  • 4 green onions, sliced (optional)

directions

  • Cut potatoes in half lengthwise; scoop out pulp and discard (or save for another use) leaving 1/4-inch shell.
  • Place on a greased baking sheet.
  • Combine oil, Parmesan cheese, salt, garlic powder, paprika and pepper and brush all over potato skins.
  • Bake at 475° for about 8 minutes and turn over.
  • Bake for another 8 minutes or so and then turn right side up.
  • Sprinkle bacon and cheddar evenly inside of skins.
  • Bake 2 minutes longer or until cheese is melted.
  • Top with sour cream and onions, if desired.

  4. this may be a silly question, but do i bake the potatoes first before starting the recipe for the potato skins or start from raw.

  1. My friends, this recipe is A-plus and two thumbs up! The skins came out absolutely perfect - better than a restaurant. I think they are so good because of the seasoned oil you brush on before baking, so don't skip that step. We doubled the recipe and served with store-bought Ranch dressing. I highly recommend this recipe! I posted a picture too.

  2. My husband and I were recovering from colds and where tired of soup. Found this recipe, the only one I had all the ingredients for, and we loved it. I think the next time I make it I will add with the cheese some taco meat and make it a full meal. It was easy to do and looked beautiful. Would serve to company. Also, very good warmed up the next day for lunch.

  4. Really good! I made them yesterday for our New Year's Eve as a snack,and they turned out great. Only different thing I did,was to spinkle the chopped green onion in them with the bacon, and then put in the cheese. We had them with sour cream,and most of them are gone.Happy New Year!

  5. Excellent recipe. I seved these as a side dish with quesadillas and they were gone in no time. I was out of garlic powder so I sprinled them with cajun seasoning to blend with the quesdillas. Will be making again soon.

  2. Delicious! Thank you for sharing this recipe! I really liked that they're baked instead of deep fried -- my family all agree they didn't miss the extra fat! My variations: 1. Doubled the parmesan, and omitted the salt. 2. Didn't use bacon. 3. Subbed Stilton blue cheese for the cheddar on a few. 4. Roasted a head of garlic in olive oil along with the potatoes; used the garlic oil instead of vegetable oil and included the garlic in the topping. 5. Mixed some shredded fontina with the cheddar. Next time I plan to experiment with a few other cheeses! These are SO GOOD!!

  3. The consensus on this recipe was a bit too salty but overall the result was very yummy. I used olive oil instead of vegetable oil and I also added 1/4 tsp of chili to the spice mix. I will definitely do this recipe again but will half the salt to 1/4 tsp.

  4. These were so good! The oil and seasonings mix is fantastic - I could almost dip bread into it. LOL. I used olive oil in the mix, and was my only change other than using bacon pieces instead of cooking my own. Crispy and delish! In fact I am going to start another batch for me andy my son for lunch- POSSIBLY will save some for hubby ... we will see. lol. **Update** I baked two large potatoes and let cool slightly and cut them lengthwise. I prepared the mix as directed and brushed onto the potatoes. Baked as directed. These would make you smack your granny! So good.

  5. Oh, I love these! I used taco seasoned ground beef because I did not have bacon. I also added caramelized onions instead of raw green onions. Delicious! We drizzled light ranch dressing on top. Shredded taco seasoned cheese was our choice, too. (I almost never stick to a recipe exactly!). Served with chips and salsa for a casual, fabulous meal! Thanks, "CrazyCooker"!
